Cabbage and Carrot Colcannon

Colcannon is a traditional British dish combining potatoes with cabbage and carrots straight from your garden, a true comfort food.

Ingredients:

500g potatoes, peeled and diced

200g cabbage, finely chopped

2 carrots, grated

50g butter

100ml milk

Salt and pepper to taste

Method:

Boil potatoes until tender, drain, and mash with milk and butter. Stir in cabbage and carrots, season, and serve hot as a side dish.


Cooking time: 30 minutes


Storage: Keep in the fridge for up to 2 days; best eaten fresh.
