Autumn pumpkin pureed with warming spices makes a comforting winter soup.
Ingredients:
400g pumpkin, diced
1 onion, chopped
1 tsp cinnamon
1/2 tsp nutmeg
1 litre vegetable stock
2 tbsp olive oil

Sauté onion, add pumpkin and spices, pour in stock, simmer 20-25 minutes, blend, season, serve hot.
Cooking time: 35 minutes
Storage: Fridge 3 days; freeze for longer.
