Spiced Pumpkin Soup


Autumn pumpkin pureed with warming spices makes a comforting winter soup.

Ingredients:

  • 400g pumpkin, diced
  • 1 onion, chopped
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1 litre vegetable stock
  • 2 tbsp olive oil
  • Salt and pepper

Method:

Sauté onion, add pumpkin and spices, pour in stock, simmer 20–25 minutes, blend, season, serve hot.

Cooking time: 35 minutes

Storage: Fridge 3 days; freeze for longer.
