Use garden courgettes, peppers, and tomatoes in a quick, healthy stir-fry for a colourful summer meal.
Ingredients:
1 courgette, sliced
1 red pepper, sliced
2 tomatoes, chopped
1 onion, sliced
2 tbsp soy sauce
1 tbsp olive oil
Salt and pepper

Method:
Heat oil in a pan, saut onion, add courgette and pepper, cook 5 minutes, then add tomatoes and soy sauce. Stir-fry 3-5 minutes, season, and serve.
Cooking time: 15 minutes
Storage: Best eaten fresh; fridge 1 day if needed.
