Use garden courgettes, peppers, and tomatoes in a quick, healthy stir-fry for a colourful summer meal. Heat oil in a pan, sauté onion, add courgette and pepper, cook 5 minutes, then add tomatoes and soy sauce. Stir-fry 3–5 minutes, season, and serve.
