Apple and Carrot Cake

Use autumn apples and carrots to bake a moist, spiced cake perfect for tea time.

Ingredients:

• 150g flour
• 100g sugar
• 100g carrots, grated
• 1 apple, grated
• 2 eggs
• 50ml vegetable oil
• 1 tsp cinnamon
• 1 tsp baking powder

Method:

Preheat oven to 180°C. Mix all ingredients, pour into a greased tin, bake 35–40 minutes until golden.

Cooking time: 45 minutes

Storage: Fridge 3 days; cake keeps well wrapped.
