Why are the new 'flowers' on my Peace lily green, not white?

The white, decorative part of the 'flower' is called a spathe and is a modified leaf. As with many modified leaves if they are placed where the light levels are poor they will revert to becoming green leaves again. If you can move your plant to a place where it is brighter, but not in full sunlight, you should find that the next 'flowers' will be white.
